CWCS’s CTE Culinary Arts online course offers students the opportunity to study at home while employing technology as a learning tool, meeting with other students in a virtual classroom, and receiving live instruction and demonstrations from a credentialed staff member.

 

Course Overview:  

CTE Culinary Arts Internship is an online course and the second year of a 2 year pathway. The culinary  arts internship class provides students a year-long study of advanced skills and aptitudes needed to  be successful in the kitchen or bakery. Students will learn and apply advanced theoretical knowledge and practical skills in culinary arts. This course is designed to provide students with the advanced fundamentals of culinary arts as well as learning about the professional cooking industry. This class will also provide an in-depth look at Nutrition Analysis, Alternative Diets, and Food Trends. The class will have a heavy focus on practice in time management, goal setting, cooperative learning and CRITICAL THINKING all while working on cooking techniques within industry standards. (I will try my best to include the above mentioned instructions).

 

Prerequisites:                                                                                                        

Culinary Arts 2108 and 2108.2

 

CurriculumRequired curriculum may be available at the Learning Center on a first come basis.  If needed, ESs can order curriculum using the OPS catalog which will have the most up-to-date pricing. Students will need:

Materials

  • Working external headset (computer speakers do not work successfully with the Canvas setup). After the third week of class and no headset, students may begin to lose participation points for the class. 
  • Materials will vary each week depending on recipe, here are some basics:
    • Cutting Board
    • Sharp Knife (will be shown different knife options in week 1)
    • Mixing Bowl
    • Measuring Cups 
    • Measuring Spoons
    • Whisk
    • Tongs 
    • Plate and/or Bowls for presenting you work

 

Requirements

  • Class textbook(The Culinary Professional)
  • Nutrition textbook chapters will be scanned in and available on canvas during pertinent assignments
  • Gmail Account and ability to open/create word documents and pdfs (Adobe Acrobat Reader)
  • Reliable Internet access

Grading

Students will be graded on attendance and participation, class assignments and discussions, module assessments, and end of semester final project.

Attendance:

Attendance is required.  Attendance is marked by completing your attendance quizzes within TWO WEEKS of the live class. The Truancy Policy applies to Canvas courses. An unexcused absence may be counted as a truancy.

  • Excused Absence is defined as:
    The parent shall notify the teacher by phone of the absence at least 24 hours* prior to the time the class meets.
  • Unexcused Absence is defined as:
    An absence that does not accompany a parent phone call to the instructor at least 24 hours* prior to the time the class meets.

*If there are extenuating circumstances that do not allow for at least 24 hours, then the teacher must still be notified prior to the start of class; allowances may be made depending on the circumstances. Examples of extenuating circumstances: car accident, sudden illness, etc. Students should arrange a "back up plan" in case of unexpected computer problems the day of the class (i.e. make pre-arrangements to go to a neighbor, friend, relative, library, etc.)  


When students are absent, they must contact the instructor via email or contact another classmate to obtain the homework assignment.

Absent/Late Work:  Late work will be accepted for half credit up to the posted late work deadline. Absences don’t extend deadlines.

Daily Homework: Workbook Assignments are completed in Canvas, under the assignment tab, instead of written book work. Workbook assignments are allowed up to two attempts 

Attendance Quizzes: Attendance quizzes must be posted in Canvas within two weeks of the live class for the students to mark attendance for the class. You will have three attempts to get your highest score on the quiz. Specific instructions for the quizzes and tests will be given in class, including procedures for submission and due dates.  

Final Projects:  There are two final projects, one due at the end of each semester. Final projects will 20% of the overall grade. For the first semester there will be a final project on all your practical assignments combined into a PowerPoint or Google Slides presentation. Instructions will be given during class.
